Fiber Muffins…that taste good!

As many of us Americans fall very short on meeting our recommended daily fiber goal of 35grams per day, here is a muffin that is packed full of fiber. And trust me, it doesn’t taste anything like cardboard. One muffin at 120 calories makes a delicious afternoon snack - either plain, heated in the microwave, or with a little nut butter smeared on it.

Fiber Muffin Recipe
1 cup oat bran
1 cup oats
1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
4 very ripe bananas, mashed
1/2 cup skim milk
2 egg whites lightly beaten
2 tablespoons olive oil
1/2 cup unsweetened apple sauce

Preheat oven to 400 degrees. Spray 12 muffin tin with Pam cooking spray. In large bowl combine oat bran, oats, flour, baking powder and soda, cinnamon and nutmeg. In another bowl combine mashed bananas, milk, egg whites, applesauce, and oil. Pour into dry ingredients and mix until just combined. Evenly fill all 12 muffin cups. Bake for 12-14 minutes or until toothpick inserted in middle is sticky, but not wet.
